Kaplanis

Business Development Manager – West

Daniela Kaplanis is a highly accomplished hospitality leader with more than 20 years’ experience across restaurants, bars, pubs and clubs. She began her career managing premium restaurant operations for hatted chefs before transitioning into the pub and club sector, where she has spent the past 14 years leading high-volume venues and large operational teams.

Daniela has held General Manager roles overseeing cross-functional teams of more than 130 staff, driving operational excellence, strong financial performance and sustained KPI growth. Her recent leadership roles include The Lower Plenty Hotel and Watergardens Hotel, where she delivered consistent commercial outcomes while maintaining high standards of compliance and customer experience.

At Mercury Group Victoria, Daniela brings deep operational expertise, strong commercial acumen and a people-first leadership approach. She works closely with venues to strengthen performance, optimise labour and cost structures, and enhance loyalty and marketing strategies within regulated gaming and hospitality environments.
